Ingredients:
237ml apple cider (1 cup)
8 tbsp (1 stick) butter, melted
106g all purpose flour
85g pecans, chopped fine
64g old-fashioned rolled oats
75g packed light brown sugar
40g granulated sugar
½ tsp ground cinnamon
½ tsp salt
1.4kg golden delicious apples (3 lbs)
50g granulated sugar
¼ tsp ground cinnamon
2 tsp lemon juice
2 tbsp butter
· · ·
1. Pour apple cider into braiser. Adjust oven rack to middle position. Place 8 tbsp of butter into 500ml glass liquid measuring cup. Microwave at 20% for ___ minutes to melt. Combine flour, pecans, oats, brown sugar, granulated sugar, cinnamon, and salt in medium bowl. Stir in melted butter until mixture is thoroughly moistened and crumbly. Set aside while preparing fruit filling.
2. Wash, peel, and slice apples into 13mm wedges. Toss apples, granulated sugar, and cinnamon (if using) together in large bowl; set aside.
3. Preheat oven to 232°C (450°F). Simmer cider in braiser at 60%; cook until reduced to ½ cup, about 11 minutes from cold start. Transfer reduced cider to previous liquid measuring cup; stir in lemon juice and set aside.
4. Reduce stove top to 50% and heat 2 tbsp butter in now-empty braiser. When foaming subsides, add apple mixture and cook, stirring frequently, until apples begin to soften and become translucent, 12 minutes. (Do not fully cook apples.) Remove braiser from heat and gently stir in cider mixture until apples are coated.
5. Sprinkle topping evenly over fruit, breaking up any large chunks. Place braiser in oven and bake until fruit is tender and topping is deep golden brown, 20 minutes. Cool on wire rack until warm, at least 15 minutes, and serve.
