Citrus Cookies

Ingredients:

284g all purpose flour
½ tsp baking soda
½ tsp salt
three citruses
198g granulated sugar
½ cup (1 stick) unsalted butter at room temperature
1 large egg
1 tsp vanilla extract
100g confectioners sugar

1. Set butter aside 30 minutes before making cookies.

2. In a large bowl whisk flour, baking soda, salt and zest from two citruses.

3. Zest remaining one citrus and set aside in a small bowl.

4. Juice all citruses and set aside. Preheat oven to 350°.

5. Using a flat beater in a large mixing bowl, beat together butter and sugar until the mixture is light and fluffy.

6. Add egg, vanilla and 2 tbsp of citrus juice. Mix with flat beater just until ingredients combine.

7. With previous ingredients mixing, add dry ingredients just until all ingredients combine. Do not over mix.

8. Spoon dough out onto two ungreased cookie sheet in tablespoon amounts (30g). Twelve per cookie sheet.

9. Cook in oven for 5 minutes, then switch sheets from top to bottom and rotate sheets 180° from back to front, then cook for another 5 minutes. Cookies are done when edges start to turn a light golden brown.

10. While cookies are baking, add 30g of citrus juice and 100g of confectioner's sugar to the zest of one citrus set aside earlier. Mix with a fork to press out all lumps in glaze.

11. When cookies are cooked, place on wire rack to cool off. Use a silicone marinade brush to brush on glaze when cookies have cooled off enough.

Makes 24 cookies
I put cookies on a cutting board before applying glaze so any excess glaze is easy to clean later.
