Ginger Ale

Ingredients:

fresh ginger
white sugar
green cardamom pods
black peppercorns
lime juice
club soda

1. Peel ginger, weigh remaining amount of ginger in grams, grate into tall saucepan.

2. Add to saucepan: (ginger grams x 10) milliliters of water, (ginger grams x 1.5) grams of white sugar, (ginger grams x 0.0088) teaspoons of green cardamom pods, (ginger grams x 0.0044) teaspoons of black peppercorns.

3. Cover saucepan with lid and bring to a boil, then turn down heat to a low simmer for 15 minutes.

4. Remove from heat and leave covered to steep for 60 minutes.

5. Strain ginger mixture from saucepan and make sure to press out all juices from grated ginger. Chill mixture before serving.

6. When ready to serve, mix 1 part ginger syrup to 1 part club soda and add lime juice to taste.

Notes:
100 grams of ginger (3.5 oz) makes 2 liters of ginger ale.
Squeeze ¼ lime per glass.
